Mike Aubertine grew up on his family’s 5th generation dairy farm in Cape Vincent. He would go on to attend college with a degree in engineering. That translated to what is now known as the Clayton Distillery where great handcrafted and homegrown beverages are created.
The Aubertine Family sold the business in 2012 to partners Roger Howard and Mike Ingerson. By 2013, the partners opened their doors and began to develop and produce their fantastic line of products.
They start each process with raw materials that are grown locally in the region.
Today, the farm is used to grow alfalfa, corn, and rye. All their spirits are distilled, blended and bottled right on site. Some of their ingredients are purchased from other local producers and together they combine to make the most sensational tasting products.
The family has a retail store and tasting room available in Clayton. In addition, their products are sold throughout New York at more than eighty stores.
They currently produce several variations of vodka, gin, whisky, liqueurs, bourbon, and moonshine. Because the environment is so important to them, they built their facility with sustainable use at the forefront. The facility has a Green Building Council design which incorporates passive solar heating and cooling. It is a super insulated structure that is energy efficient for both mechanical systems and lighting. They even use waste heat to heat most of the building that is leftover from the distilling process. They recycle the by-products from the distilling process which is called “stillage”. The stillage is mostly grain and water after the alcohol has been removed, allowing the area farmers to use it for animal feed.
