The dough is hand patted out and raised on the sides giving it that deep dish appeal everyone loves. It’s a flaky buttery crust you won’t forget. Their ingredients are second to none. In fact, they send a team of 5 people to California each year to meet with the growers and seek out the best vine ripened plum and pear tomato crops. Their cheese comes from the same small dairy in Wisconsin for over 40 years now. They use a special mix of ingredients to top your pizza like mozzarella cheese, onions, sausage, pepperoni and spices to name a few. Their recipe is the true original recipe of their Grandpa Malnati which helped create and establish Malnati’s Pizzeria in 1943 in Lincolnwood, Illinois.
On opening day, something unforgettable happened when a car drove through the middle of the dining room. The restaurant was such a huge success that a second location was opened in Elk Grove Village, Illinois. Unfortunately, the Elk Grove location struggled for the first 14 months it was open due to a major road construction project that begin just a few months after they opened. One of Lou’s accountants advised him to shut the place down before he was in financial ruins but Lou wouldn’t hear of it. Fortunately, time was on his side and the restaurant was a huge success.
By 1978, Lou Malnati succumbed to cancer and passed away. His oldest son Marc who had just graduated from college decided to join in and help his mom with their family’s business. Several years later, Rick who is Marc’s younger brother wrapped up his basketball career at Illinois’ Bradley University when he begin helping in the family business as well.
